The best part about having a luxurious vacation home to stay in is that you get all the comforts of your own home while you’re here in the city. Here are a few simple San Diego recipes you can use to take advantage of your kitchen:

“Do You Like Piña Colada?” Pancakes

Prep time: 10 minutes

Cook time: 15 minutes

Ingredients:

• 1 1/2 cup all-purpose flour
• 1 tbsp baking powder
• 1 tsp salt
• 1 tbsp granulated sugar
• 1 cup coconut milk
• 1 egg
• 2 tbsp coconut rum
• 2/3 cup crushed pineapple (drained)
• 1 cup powdered sugar
• 2 tbsp coconut milk
• 1 tsp pineapple juice

Steps to Prepare:

1. Pancakes first! Mix the flour, baking powder, salt, and sugar in a mixing bowl. (Make sure to mix the dry ingredients well before adding the wet ingredients). Then stir in the egg, 1 cup coconut milk, coconut rum, and pineapple.

2. Now it’s time to make the glaze. In a separate bowl, whisk the powdered sugar, 2 tbsp coconut milk, and pineapple juice.

3. Heat a frying pan to medium and make these pancakes whatever size you desire! It’s your vacation. When the batter begins to bubble, that’s when you know they’re ready to flip. Repeat the process until you’re out of batter.

4. Drizzle the glaze on before serving them up hot.

5. Bonus step: If you’re feeling fancy, throw in some toasted, shredded coconut for some added flair!

Bite-Sized Cranberry Brie Appetizers

Prep time: 20 minutes

Cook time: 15 minutes

Ingredients:

• 1 tube crescent dough (8 oz)
• 1 wheel of brie (8 oz)
• 1/2 cup whole berry cranberry sauce
• 1/4 cup chopped pecans (optional)
• 6 sprigs of rosemary
• Cooking spray
• Flour

Steps to Prepare:

1. Preheat oven to 375°F. Spray a mini muffin pan with cooking spray to make the treats easier to remove.

2. Sprinkle flour on a board or on the counter (to keep the dough from sticking). Roll out the dough, cut it into 24 squares. These should fit snugly in the pan. Place them there now.

3. Dice up the brie and divvy it up between the pockets of dough. Drizzle a bit of cranberry sauce on each afterward, along with the pecans.

4. Top them each off with a little sprig of rosemary for style.

5. Bake for 15 minutes. You’ll know they’re done when the dough is golden.

Classic Tequila Sunrise Cocktail

Prep: 5 minutes

Ingredients:

• 2 ½ cups ice
• 2 fl oz. tequila
• 4 fl oz. orange juice
• ¾ fl oz. grenadine

Steps to Prepare:

1. Take 1 ½ cups of ice and fill a highball glass, then set it aside for now.

2. Use a cocktail mixing glass and combine the tequila, the orange juice, and the rest of the ice (1 cup).

3. Strain it into the highball glass.

4. Pour in the grenadine and let it settle on the bottom.

5. Watch as you get that beautiful sunny gradient that makes a Tequila Sunrise!
